The land

Candilia, a land in the heart of Sicily

Where the land is memory and the fruit is a promise.

Long before this land was called Candilia, it was already devoted to the earth. The ancients told of Demeter, goddess of harvest and fertility, who crossed Sicily with her torches searching for her daughter Persephone, carried off to the underworld. Wherever the torchlight touched the ground, life began to sprout again. Wheat grew. The trees bore fruit once more. It is from this ancient bond between land, light and harvest that Candilia – Terre di Demetra draws its inspiration. In the heart of Sicily, on the hills of Piazza Armerina — the town that guards the Villa Romana del Casale, a UNESCO World Heritage site — our olive-growing project was born, deeply tied to the land it comes from. At around 700 metres above sea level, our grove lives within an ancient landscape of hills, olive trees and seasons that have always set the rhythm of farming. Here we tend and safeguard centuries-old olive trees: the memory of this land, still giving their fruit today. For us, the quality of the oil begins with the soil. We follow the trees throughout the year, with care and respect for the natural balance of the environment. An oil is born of a fruit. But before that, it is born of a land, a season and a choice. Our choice is to care for this land and let its fruit speak. Candilia, where the land is memory and the fruit is a promise.

The product

Extra virgin olive oil, 2026/2027 harvest

A meeting of four cultivars — Biancolilla, Leccino, Moresca and Nocellara dell’Etna — giving a harmonious, fragrant extra virgin oil. On the nose: green olive, freshly cut grass and olive leaf, with delicate notes of artichoke and almond. On the palate it is balanced, with a pleasant bitterness and pepperiness and a fresh, lingering finish. Versatile at the table, it shows its character best raw, on bread, vegetables, pulses, fish, white meats and Mediterranean dishes.

The cultivars

The four souls of Candilia

Biancolilla

A traditional Sicilian cultivar that lends the oil elegance and a delicate aromatic note, helping to keep the blend in balance.

Leccino

A widespread and adaptable Italian variety. It brings softness and harmony, with a generally balanced, agreeable profile.

Moresca

A Sicilian cultivar typical of eastern and central Sicily. It adds roundness to the oil and a delicate aromatic component.

Nocellara dell’Etna

A Sicilian cultivar tied to the slopes of Etna. It brings more structure and personality, with a bolder aromatic profile.

Values and practice

Our way of making Olive Oil.

From harvest to bottle, we follow a simple path shaped by time, care and attention.

Harvest

We pick the olives by hand in the first days of October, ahead of full ripeness, to preserve freshness, aromas and the quality of the oil.

Extraction

Mechanical, cold (<27°), within a few hours of picking: aromas, polyphenols and the bitter-peppery character of the olive stay intact.

Unfiltered

After milling, our oil is not filtered. It keeps part of the micro-particles and natural substances left after extraction, which make it cloudier and more distinctive. Over time a natural sediment may settle at the bottom of the bottle.

Methods and techniques

Permanent grass cover with natural mulching, fertilising and crop protection based solely on products allowed in organic farming, melliferous plants and areas that support beneficial insects.

Limited production

One harvest a year, in small quantities, with traced lots and the year of production declared. An exclusive production: 100 bottles of 250 ml. 100 bottles of 500 ml. 25 Bag in Box of 5 L.

Direct from the grove

From the district to the bottle with no steps in between: whoever buys it knows exactly which trees the oil comes from.

Delivery and pick-up

Pick-up on site is by appointment.

For shipments within Italy and abroad, the cost is calculated based on the format and the quantity of your order. In any case, before confirmation you will receive the final total, including shipping costs.
